    Yo Pericles –

Just got back from Whole Foods and am fixing dinner for my dogs, while my female friend sleeps. Anyway, it was a pleasure running into you again. Think I’ll try integrating a shot of the raspberry vinegar as a morning tonic. You know, Braggs’ apple cider vinegar promotes itself as a tonic, and I have a bottle, though I rarely use it, for whatever reason. I like the taste of your raspberry vinegar quite a lot. It’s kind of a grabber. More than just for salads.

I mentioned ORAC values to you. It stands for oxygen radical absorbance capacity. Free radicals damage cells, so a high ORAC value protects cell structures. Blueberries have a high ORAC value. In fact, the Life Extension Foundation monthly magazine did a cover story calling blueberries nature’s most perfect food.

I liked the midwest roots we share. So next time you come to Portland, if you feel like getting together, say for dinner at Alexis Greek Restaurant, it would be a good excuse for me to go to my favorite restaurant. One of the owners, a guy named Gerry, is a very nice guy, and just might be interested in your products.

Good running into you again. Hope your time in Portland is productive. Portland is a good place, not just for business, but for having fun.

We bought your Pure Blueberry Extract at the Bellevue Whole Foods store today and think it is delicious. You asked us to email you to get a great salad recipe that you have which has the extract mixed with some other items, mandarin oranges, dill, etc. Please email me the recipe.

    Thank you

    • Pericles says:

Hi Werner. Thank you so much for buying the Pure Blueberry Extract. I am thrilled with it and am excited for the other products that are on their way.

Werner last night I made the most delicious salad. Here is the recipe.

In a 3 quart bowl add the following in this order:

      3 TBSP Pure Blueberry Extract
      1 TBSP Rice Vinegar
      1 TBSP Olive Oil
      2 TBSP Finely cut shallot
4 Quarters Finely Cut Mandarin Orange
Rogue Creamery Oregon Blue Cheese to taste
      3 Pinches Sea Salt
4 Twists of Pepper Corn Mill
Crushed Salted Nut Medley ( Macadamian, Almond, Cashew, Etc.)
      Fresh Dill to taste.
Shaved Cucumber lengthwise with a potato Peeler Enough for 3 People

Stir this together for a minute or so.

Add mixed greens or finely cut butter lettuce. Two Handfuls should do for three people.

Stir this all together for 3 minutes and then serve.

I hope you enjoy this Werner. I will be making a Blueberry Vinegar here pretty soon which I am thrilled with. The prototype is so delicious that I find myself sipping on it. It is like a Fresh Blueberry with a jagged edge.

Again Thank you for buying my product.

I hope you get back to me with your results.

  3. Hi Pericles~!

I got your note about the sign holders. I’ll be doing an order in the near future, please email me direct through our website. I would like to talk about that blueberry powder you mentioned when you were doing a demo @ West Seattle Thriftway. I told my hubby you had a powder and his eyes lit up and he got very excited.

With his health issues we try to regulate everything as much as possible through nutrition and I am happy to report that he has great feedback for your product. “It’s the first thing I have randomly tried that has had a positive effect and I can feel it changing my body for the better.” I also checked out a customer today that said he was using it in his homemade Kombucha!

Anyhow, thank you for your great product, when my husband is happy, I am. I am excited tyo get my hands on some blueberry powder and surprise him. Hope to hear from you soon.

    Michele

I was at Whole Foods in Redmond on Saturday with my daughter. We talked to you for a bit ( the Austrian, remember?), and I got your Raspbery vinegar and also the Blueberry extract. What great and delicious products! Thanks for sharing all the interesting information with us.
    Smiles,
    Sabine

    • Pericles says:

Hi Sabine. I am thrilled that you and your daughter enjoyed the Blueberry Extract so much. Sidhu Farms in Puyallup takes great care to grow those blueberries and I take great care to cold press them. Its all about cold pressed fruit.

Its interesting that my business is unique because I am making the ingredients that I use so the flavors are huge and bright with the natural sweetness of the fruit itself.

Hooray for yummy cold pressed fruit products and happy people like you and your family.

Remember to drizzle it over vanilla bean ice cream.

      Kindly,
      Pericles

    Hi,

Would it be possible to send me the cost sheet for your industrial kitchen space rental?
Also, do you have separate areas-meaning other people may be working in the same kitchen but in a separate area while i’m there OR is it all a single space and only one person can be there at a given time? I have a friend who is starting to sell baked goods, I do more of a catering business, and we would like to work together.

    thanks,

    • Pericles says:

      Hi Evelyn,

Two companies can work at Four Seasons Gourmet Foods at the same time as some companies do. Regarding your catering business what kind of gas equipment are you in need of for your preparation for your events?

      Sincerely,

      Pericles

  11. Evelyn - Whole Foods Shopper says:

    Hi Pericles,

It was nice meeting you, twice! I am still experimenting with your raspberry vinaigrette. I have used an Italian olive oil, not sure if the origin makes a difference. I am convinced that blue cheese is a must, so I am at a stand still until I pick some up. Do you think dijon mustard and oregano would work with this as well? I have been looking up recipies on the internet and found a couple of them with mustard and oregano – no blue cheese.

    Thanks!

  12. Ed and Sharon says:

    Periciles,

We love the raspberry vinegar we bought from you at the Edmond’s Farmers Market on Saturday, May 28th, 2011. Day two and it’s GONE! We made salad dressing with two parts vinegar, one part olive oil, cracked pepper and a pinch of sea salt. Dressed baby greens, feta, and blueberries. All organic. It was excellent. See you next Saturday!

    Ed

    • Pericles says:

Hi Ed. It is flattering that you and your wife are so kind with your words and with your enthusiasm. The real head fake here is that I make these products not only because they are delicious but because they provide our local food manufacturing community and growers the opportunity to unleash more of their potential. I’m sure I’ll see you and Sharen at the Edmonds Farmers Market. Thank you again for being so kind and supportive.

      My best,

      Pericles

    Hey Ziggy,

I’m excited to taste this Jersey Food. God I wish I had this huge business so that I could help other people blow their businesses up. That’s alright. We’ll all get there with some blood sweat and tears.

Have a look at the kitchen agreement and let’s figure out how to make it happen.
